Last week's Star Baker, Holly, goes green with a pesto-inspired quiche, using 200 grams of basil leaves and discarding the stalks.
{Holly}: "I'm going to be making a pesto inspired quiche. I'm not using the stalks, so to get 200 grams of basil leaves."
Mary questions the waste. {Mary Berry}: "It's a shame. It's very expensive not to use the stalks, and if you chop them terribly finely, nobody would know."
Paul worries the concept is too simple but wishes her well, noting it will only work with a good proportion of cheese.
{Mary Berry}: "I'm afraid I'm not mad about it."
{Paul Hollywood}: "Doesn't work for me. Pesto is designed to be an accompaniment to something. It's too much."
The judges felt the pesto overwhelmed the quiche rather than complementing it. Holly went on to finish 4th in the technical.
