Pina Colada Roulade

{Ruby}: "My roulade day is inspired by the years that I lived in Liverpool. Had a lot of good times with my friends going out, so I'm doing a pina colada, that classic Liverpool cocktail." {Ruby}: "I'm making a pineapple curd on the side as well." Ruby's Girls Night Out roulade features a boozy coconut cream filling layered with roasted pineapple rolled up in a coconut meringue.
Paul: "It's really cylindrical. The shape fits even all the way down." Ruby: "Praying. I'm praying." Paul: "You've sort of got a fold rather than a swirl." Ruby: "Perhaps you should have been just a bit tighter. Okay." Paul: "It's beautiful and light. The flavors are stunning. It is a pina colada." Prue: "The coconut and the pineapple is just there." Paul: "It's a fantastic roulade. Your drinks are good. Nice and smell good. Thank you." Ruby: "Thank you very much."
