Pistachio Frangipan Tart with Rhubarb Compote, Creme Patissiere, Poached Rhubarb, Orange Liqueur Chantilly Cream, and Almond Crumb. 


Polly returned confidently for the cook-off with a dessert. She said: 'I saw rhubarb in the larder. I grew up with rhubarb. So I'm going to do a dessert kind of based on mum's rhubarb pies. It's a pistachio frangipan tart with rhubarb compote and creme patissiere. It's kind of a play on rhubarb and custard.' The judges praised the concept: 'I love the use of pistachio in a frangipan. It gives it a wonderful green colour.' The pastry had pistachio running through it as well. The dish included poached rhubarb on top, an orange liqueur chantilly cream, and an almond crumb. Polly reflected: 'I did a lot of patisserie in my old work. I haven't done it in a while, but hopefully it comes back to me.'

It's great that when you cut into it, you can see the layers. The pastry is beautifully made. The filling of pistachio instead of almonds, I really like pistachio, so this works for me.' 'Probably all the elements are very good. Got a nice rhubarb taste coming through there. But the creme pat doesn't really work for me. I think it's too cloying. It's just not blowing me away.' 'I think it's a great effort. The rhubarb and custard element that you brought into it, I actually really like. I love the creme patissiere with it. I find sometimes a frangipan tart can be a bit boring. You've made this really exciting. I think it's really good.' In deliberation: 'I liked Polly's dessert. Pastry was well made. I really like the pistachio instead of the almonds. Big fan of the creme patissiere. The rhubarb just brought that little tartiness to it that it needed for me.' Polly progressed to the next round.
