Plant Based Chocolate and Ginger Cake with Tonka Bean Tofu Mousse, Orange and Ginger Sauce, Orange Gel, and Nut Crumb. 


Gemma chose to make a dessert her mother would love. She described it as: 'A ginger chocolate cake and a tonka bean mousse that I'm going to put on the side with an orange and ginger gel and ginger cream.' She confirmed it would be fully plant based, saying she had pastry training to draw on. The judges noted: 'Gemma is making a ginger chocolate carrot cake. Nice and light and fluffy. The flavours of ginger singing through. It's coming down to her to really make this come to life, because cake, at the end of the day, is cake.' One judge observed that tonka bean is a big vanilla-like flavour that, if used too heavily, can overpower a dessert. During cooking, Gemma was seen to drop her chopping board while rushing with just minutes to go.

I do love the ginger cake. It's soft. It's got a lovely texture. It's really moist. But this cream that you put over the top, it doesn't look great. It's not got a great finish to it. You don't need the crumb on the side. It brings nothing to the dish. There are bits that have been thrown together and things that do not need to be on the plate.' 'The mousse, it's creamy and it's got the hint of the tonka, but it's also quite neutral in flavour. There's just not a lot that I'm getting out of it. What I do appreciate is the sharp orange gel on the side. But it's not a dessert that is blowing me away.' 'I don't think presentation is your strong point, but putting together a plant based dessert is no mean feat. So well done.' Gemma said: 'I tasted good by itself. It just didn't come together.' Gemma was eliminated from the competition.
