Traditional Puerto Rican plantain lasagna with layers of short rib ragu, fried plantain and manchego cheese bechamel.
Leia is a medical writer who was taught to cook by her grandmother. Born in Puerto Rico, she moved to the UK 16 years ago.
Leia: "I'm making this dish today because it's a Puerto Rican classic. In Puerto Rico you have too many ripe plantains. Everyone looks at each other like, who's gonna make the plantain lasagna?"
Leia: "Puerto Rico is an island that has three main cultures. You have African, Spanish, and Taino, which is our indigenous people."
Anna: "Short rib takes quite a long time to cook. I just hope that it's melt in the mouth and it's not chewy."
Anna: "Your short rib ragu has an acidity and an unctuousness to it that's really very, very delicious. But the ratio of ragu, plantain and bechamel is off. Less plantain and more bechamel."
Grace: "The cooking of your plantain is masterful. Yours is soft. This is a good home-cooked dinner with lots of great flavours that needs finesse."
