Plum, Cherry and Five Spice Tarte Tatin

Mum of two Cathryn takes her family camping whenever she can. For her tatin she created her own five spice mix with almost a pound of fresh plums and cherries. Cathryn: "My children [are] definitely the guinea pigs for my recipes, but they are probably my harshest critics. If they don't like it, they won't pretend that it's lovely." Cathryn: "It hasn't been entirely successful when I've been practicing at home, so [I'm] hoping I've got the creases out at home and it'll be all right today." Cathryn: "I want to keep the bottom of the pastry as crisp as possible, but it means it's colouring a lot more quickly, so I've made it a little hat to put on top to stop it going too dark while it finishes cooking."
Mary: "It looks lovely in colour. I was a bit anxious about the five spice because I hadn't done it before with something sweet. It's quite scrummy and clever. That five spice goes very well." (Cathryn: "Oh, it's terrible, isn't it?")
