Private chef Gareth chose to make a plum frangipan tart, saying: 'I had a very different plan before I went into the larder than what I came out with. So think on your feet, adapt and survive. I've gone to do pastry. It's definitely not my strongest setting.' He chose the plums from the larder and served the tart with a brandy custard. He told the judges he went for a dessert because he thought most others would make savoury dishes and he wanted to stand out. He was pressed very close to the time limit, with the pastry barely out of the oven before plating.

Gareth, your pastry making is great. Your frangipan is delicious. Custard is knockout. It's not too thick. It's got a really lovely flavour of the brandy in it. You've really boosted it up. It's great.' 'The filling of the plum is fantastic. It's not overly sweet. But keep your eye on the time. I think you're very lucky you got away with that.' 'I love this. This is a masterclass in doing the simple things well. Well done.' Gareth said: 'I was to the wire, but they still thought it was delicious. I think that was a good day.' In deliberation: 'I think Gareth is another chef that did very well. Really, really delicious little frangipan tart. Beautifully done. He deserves to go through.'
