Closing dessert course of the winning blue team's egg flight, paired with pinot grigio. Sieger: "On the bottom, you've got some peaches that's poached with a little bit of ginger and the pinot grigio. And then on top you have a sabayon." The team deliberately inverted the conventional white-rose-red progression, ending on a white wine to create a palate-cleansing dessert finale. Sieger: "With this, I can do a dessert, and it'll be a cool progression with red and then white." After the win: "Justin and I are finally on the board. I think the three of us needed a confidence boost." Judges praised the poaching and found the pairing highly successful.
