Polenta Cachapa with Caramelized Brown Sugar and Crispy Provolone 


Oscar drew on the Caramel Cookie Crunch gelato flavor and connected it to his Venezuelan background through a cachapa - a sweet corn pancake made with polenta - caramelized with light brown sugar and butter to mimic the caramel and almond cookie character of the gelato. 


He topped it with crispy provolone griddled directly until golden, using the salty fat of the cheese to counterbalance the sweetness below. 


Oscar described the dish as representing his style: nostalgic moments with a creative remix, referencing his background in music and creative arts alongside cooking.

{Mei Lin}: I thought it was going to be overly sweet, but it balanced out really nicely. Actually, with the cheese, it was really like a late night snack. One of three featured favorites.
