Starter: Coarsely cut Polish steak tartare with a soy-cured egg yolk, served with homemade dill-pickle flavoured crisps. 


Antos: "With this challenge you have to be the third best at the very least. But I really want to be the bester. I'm making a Polish steak tartare. Polish steak tartare is generally a bit more coarsely cut. I think it's tastier that way as well - with a soy-cured egg yolk served with dill-pickle flavoured crisps." 


Antos (on Japanese flavours in his main): "I think cabbage and Japanese flavours really marry well together." 


Antos: "This is where the nervous part happens." 


Antos (presenting): "I'm really delighted with it. What I've made for you today is a Polish steak tartare with a soy-cured egg yolk and dill pickle flavoured crisps." 


Antos: "The egg yolks survived. Okay, now the fear starts."

Anna (during cook): "The really good beef tartare has got a great balance of your onion, your pickles, your spice, and the creaminess of your egg yolk." 


Dhruv Baker: "Antos's starter. I love a beef tartare. Want that rich, beefy flavour. And then spike that with a bit of heat, tiny bit of acidity." 


Natalie Coleman: "The soy-cured egg yolk - it won't be that cured because obviously he's only got so much time. So it'll still be quite runny." 


Natalie Coleman: "It's quite impressive that he's making his own dill pickle crisps. So you'll have the pickle element to scoop it up with." 


Dhruv Baker (tasting): "The beef tartare, I love the flavor. You've got the acidity and the saltiness. It balances perfectly." 


Pookie Treadle (tasting): "I love the soy-marinade egg yolk. This is absolutely yummy." 


Natalie Coleman (tasting): "The dill-pickle crisps - I really love dill and it packs a punch. He's done a really good job here." 


Anna (tasting): "The steak tartare is really tender. It's nice." 


Grace (tasting): "The star of the show here is a dill pickle crisp. Just lovely." 


Anna (summary): "The dining room had a cook of the day, and that was Antos. His Polish steak tartare was delicious. Those dill pickle crisps I thought were a stroke of genius."
