Brittany: "I'm blanching my collards. I'm gonna grind up my applewood smoked bacon, pork butt, and ground pork for a sausage. I need to make this entree, and so it needs to have some sort of protein and a really nice seasoned sausage wrapped in collard greens. It's crucial." Brittany (crisis): "I open up the steamer. I see no steam. Something isn't right. Oh my God. This is ice cold. I'm raw. My sausage should be cooked all the way through." Brittany: "I'm not familiar with the steamer. What do I do? There's no way that I can serve raw pork. I can't start over. I'm just not a quitter." Brittany (pivot): "The pork. We bind it with a little bit of mayonnaise, a little bit of potato." Note: Justin donated potato from his dish to help Brittany bind the filling. Brittany: "I did a pork and fennel sausage wrapped in a collard green leaf, and I made a little raw salad in a smoked tomato butter sauce." Brittany: "This is not what I originally wanted to put out. I wasn't able to pivot sooner than I needed to, and I just needed to get something on the plate today." Brittany: "I learned that I need to put trust in myself."
Bottom three. Eliminated. {Padma}: "Is this dish meant to be room temperature, or was it supposed to be hot?" {Tristan}: "I don't understand what I'm eating. I feel for her as a person who's been back there." {Tom}: "She said it was sausage. There's not one thing in there that says sausage." {Judge}: "The texture isn't just mushy. It's also sort of sharp and mushy." {Tom}: "Brittany's dish wasn't what she imagined. She went into it maybe with too much confidence, and then lost it as the wheels started to fall off." {Tom}: "You have to have a backup plan, and you've got to learn how to pivot." {Padma}: "Brittany, please pack your knives and go." {Tom}: "We'll see you in Last Chance Kitchen. I know you can cook."
