Pork Mince & Sage Tart with Heritage Beetroot, Caramelised Apples and Hazelnut Crumb 


John's signature: a thin-crust tart of pork mince cooked with onions and garlic and seasoned with sage, served with heritage beetroot, sweet caramelised apple segments and a toasted hazelnut crumb. The judges likened it to an elevated sausage roll.

Judge: "The pastry is great, but in the pork I needed much more of the sage and other seasonings just to make it sing. The very sweet apple segments - I'm not sure they have a place on this plate." 


Judge: "You've been very generous with the portions. Really try to work on your presentation. If you chopped the apples and beetroot and put them through, it would be a game changer. A few tweaks and you've got a good dish."
