Henry: "I made a scallion yucca pancake with gruyere cheese sauce on the bottom and then some chili oil around it." 

Kristen Kish: "What about this pancake? What was the inspiration for the dough?" 

Henry: "Growing up, my mom made a lot of, like, scallion pancakes, so I really wanted to make something very familiar."
