Part of Yannis's trolley of "classic retro British puddings." Yannis's own spin on Mary Berry's Queen of Puddings. Yannis: "And the queen of puddings." Yannis: "I've seen your recipe, actually. I'm sorry to disappoint you, but I'm using Mary Berry's one." Yannis: "I've got my custard for the queen of puddings. So once it's layered, things will start to come together." {name}: "...the flavors will combine with the queen of puddings. Your breadcrumbs absorb the custard." Yannis: "I think it's important that I get all my ratios right." Yannis: "So I've got some classic retro British puddings. Got the queen of puddings, sticky toffee pudding and black forest gateau." Yannis (after judging): "The overall feedback was a bit more in the middle ground. Did I do enough? I'm not sure."
[Showstopper: a retro dessert trolley of at least three individually portioned desserts, eight of each, with at least one baked element. 4 hours 30 minutes.] Nigella (at the bench): "Queen of puddings is one of my favorites." / "Make sure all the components work together, that the textures work and that the tastes work." Nigella: "I can't taste the bread." Paul: "You haven't got enough in there. That's where you're lacking the depth." Nigella: "The layers aren't in the right balance, and it does need to have a lightness, a dreaminess."
