Main: Ras el hanout seared duck breast, braised chicory with a cumin celeriac purée, pickled raisins, pomegranate seeds and a pomegranate jus. 


Gareth: "A ras el hanout seared duck on celeriac purée, chicory, pickled raisins with the pomegranate jus. Yeah. Lot of work, a lot of pieces, but hopefully they all go together really well." 


Gareth (on the duck): "It's a nice pink and hopefully crispy enough skin." 


Gareth: "Ready to rock." 


Gareth (presenting): "For your main course, I've made a ras el hanout seared duck breast, braised chicory with a cumin celeriac purée, and pickled raisins and pomegranate seeds and a pomegranate jus. Hope you all enjoy." 


Gareth (after): "That was something else. The time just sneaks up on you. And suddenly, just scrambling." 


Gareth: "I would love to have the chance to continue on because it's been a great experience and I would be sad if it ended here."

Anna (during cook): "For Gareth's main course, I want that duck skin rendered down to a crisply beautiful texture, and I want that duck blushing pink in the centre." 


Pookie Treadle: "Ras el hanout duck. The duck needs to be cooked perfectly." 


Natalie Coleman: "The celeriac purée, you want it to be nice and creamy and still have that earthiness." 


Dhruv Baker: "There's a pomegranate jus. There's raisins, which will be sweet. So for me, the key here is to balance all of those sweet elements without them overpowering the duck." 


Dhruv Baker (tasting): "I like the kind of smoky spice crust on the duck breast. I wish it had longer skin-side down just to render out that fat, but it's been cooked beautifully." 


Natalie Coleman (tasting): "Otherwise, I quite like the purée, and I like the bit of chicory as well. But the pickled raisins, for me, just are not working. I think they're over-pickled." 


Pookie Treadle (tasting): "The sauce itself, it needs to be a lot thicker." Grace (tasting): "The duck is the best part of this dish. It's nicely cooked." 


Anna (tasting): "The sauce is quite tart. The pickled raisins are very heavy on vinegar. In general, I think there's an overkill of acid on this plate." 


Anna (summary): "His duck was nicely cooked, but the pomegranate sauce and the pickled raisins, for me, they were a problem." 


RESULT: Gareth was eliminated.
