Raspberry Triple Chocolate Layered Tart

Narrator: "Stuart hopes to put his technical slip up behind him with a triple layered chocolate tart, which includes a fresh raspberry jelly."
Stuart: "This bake's got sort of fairly tricky elements. It's just making sure that everything's set. Because if it's not set it will just all ooze out and it won't be very nice really."
On his macadamia praline crunch layer: Stuart: "That's going to be in the crunch layer. So I'm going to turn it into a praline, then mix it with like a brown sugar crumble and some fortune cookies."
Paul told him: "Let's not beat around the bush here. You've been struggling for a couple of weeks now. And this I think has got to be your masterpiece."
Later: Stuart: "I've overworked it slightly, so it's very crumbly and it shouldn't be like that."
Stuart: "I think I've done enough to get through to next week, hopefully. I think it's too close to call this week."
Paul: "It's very attractive. The colour on it looks pretty good as well. Look at that coming out. You can see all the layers on it."
Mary: "How about the bottom?"
Paul: "Good base."
Mary: "I can see this in the front of a patisserie window. Very clever."
Paul: "I like that. There's so many textures going on in there. And then you've got the sharpness coming through the fruit as well."
Mary: "Very clever and very original. Excellent."
In deliberation, Paul: "For me, Stuart is up there. I think his flavour combinations have been fantastic." Mary: "He promised us the three layers of chocolate. When you cut through, there it was."
