Anthony's second-course option is Charleston-style red rice (a Lowcountry staple of long-grain rice cooked in tomato-rich liquid until each grain takes on a russet hue) topped with smoked oysters, shrimp, and slices of pickled okra, and sauced with a seafood bearnaise. 


Anthony: "I started cooking a rice dish similar to this back in Miami, and the flavours are good, so I think it's gonna be a good one." 


Anthony plated tableside: "You have red rice, there's smoked oysters, a little bit of pickled okra, and a gremolata, which is on top of your rice." 


Anthony entered the episode with immunity from the prior week.

{Gail}: "I'm having a hard time getting over the texture of the combination of a little too much sauce and a little too much okra." 


{Tom}: "Okra and the bearnaise together." 


{Michael}: "Yes, that's what I'm saying." 


{Tom}: "Something looking for the red rice." 


{Michael}: "I don't know if it's supposed to be like that. I don't think so." 


Judges' table - {Tom}: "Anthony, I thought the rice was unevenly cooked." 


{Gail}: "There was so much gooey, like a mozzarella stick pull, that it really took away from the red rice of the dish." 


Deliberation - {Tom}: "Anthony's lucky he has immunity, because I don't understand this red rice and bearnaise sauce. I scratch my head on that one." 


{Claire}: "It didn't hang together at all."
