Rhubarb and Custard Cake
Ruby's childhood-inspired rhubarb and custard cake featuring candied rhubarb she's crystallizing in sugar syrup. She's the youngest baker, studying history of art and philosophy, and chose this combination because she really likes rhubarb and wanted to get it into a recipe before potentially being eliminated.
Paul: 'The creme patissiere is awful. It's not quite thick enough. You see how the rhubarb and the custard have mixed together. More like a fool. But the actual sponge is very good.'
