**Roasted Cauliflower, Cheese and Caramelised Onion Quiche** 


Mary-Anne loves turning ordinary ingredients into something extraordinary and takes an unusual route with her pastry. 


{Mary-Anne}: "I don't want to do ordinary. I want to take ordinary ingredients and make them taste extraordinary." Rather than shortcrust she makes a suet crust with caraway seeds, using self-raising flour and adding fresh breadcrumbs to lighten it. 


{Mary-Anne}: "I'm doing a suet crust with caraway seeds, and I've also added some fresh breadcrumbs to lighten it up." Paul notes the suet crust gives the base a bit of air and "zip" to carry the heavy filling.

{Mary Berry}: "It doesn't tempt me to eat it, but once I get going it's jolly well - lovely and brown around the outside." Turning it over reveals a problem. 


{Paul Hollywood}: "Oh, dear." 


{Presenter}: "That is a soggy bottom." 


{Mary-Anne}: "Soggy bottom." The unconventional suet base gave a wet, soggy bottom that disappointed the judges. Mary-Anne finished 9th in the technical.
