Roasted Duck with Polenta

Shuai: "The first course, I'm going to do a little barbecued duck."
"I decided to go with duck because I grew up eating barbecued duck Chinatown style."
Shuai: "My polenta is a little tight, so I'm just going to add a little more water to it. Polenta is often loaded with tons of butter and cheese, but since the duck is also fatty, I'm going to season it with a little kosher salt and just the tiniest bit of butter, keeping it very simple."
Presenting to Judges
Shuai: "This is an ode to Chinatown barbecue. So it's a roast duck that's seasoned with five spice on some creamy polenta."
Judges: "What did you add to the polenta, Shuai?"
Shuai: "I just cooked it in water, a little bit of butter, salt, white pepper. Kept it pretty simple because all the other flavors are pretty strong."
