Roasted Eggplant with Smoked Burrata, Compressed Tomatoes and Olive Oil Powder. 


Techniques: Smoke, Compression, Powderizing (3 techniques). Chris Morgan: Roasted eggplant with smoked burrata, compressed tomatoes, and vinegar. Then I made an olive oil powder with maltodextrin. On his eggplant: I don't think I'd be able to return home if I couldn't cook eggplant properly. This dish put Chris into the lead with 77 points.

Padma Lakshmi: Your eggplant is cooked beautifully. Wiley Dufresne: As an on-the-record, non-lover of tomatoes, these are delicious. The compression really improved the texture and intensified the flavour. But with maltodextrin, you have to use a super flavourful fat — pick a brighter, sharper, pepperier oil. Something that's punchy.
