{Day}: "I'm gonna do, like, a quick pan sauté so that I can infuse as much flavor as possible. Just gonna season it with a ton of herbs. Usually in Haitian cooking, we use a lot of fresh herbs, but I don't have time to build flavor, so I'm going to add some herbes de Provence."
{Day}: "I am making snapper. Make sure that they get a lot of flavor. I got a lot of herbs, child." Crisis moment:
{Day}: "Is this on? This oven isn't even on. I spent five minutes thinking that the oven was on. The oven was never on. What the - so now I have to put the snapper in the back of it. All my plans out the window."
At presentation: {Day}: "Carolina Ruby roasted with some herbes de Provence, a sauce créole rose, a note to my Haitian heritage, and a seared and roasted snapper."
A judge observed: "Mine's a little under. Mine too."
At judges' table: {Day}: "I got flustered, and I overcompensated, especially with the herbes de Provence, because I didn't think I could build the flavor that I was really looking for as fast. I overthought things."
ELIMINATED — bottom of the Carolina Ruby round and eliminated from the competition. Judge: "Day, unfortunately, you are our least favorite dish. The fish was undercooked, as were the sweet potatoes. The herbs was pretty powerful." Tom Colicchio: "There was herbes de Provence on everything. It didn't enhance it at all." Another judge: "Herbes de Provence is for me a sachet in the underwear drawer." At judges' table: "Day's dish had a lot of issues. The fish was raw. The sweet potatoes were crunchy. Way too much dry spice on it. Didn't taste very good." Kristen Kish: "You kind of lost focus a little bit." Final verdict: "Day, please pack your knives and go. The fish was undercooked, the sweet potatoes were undercooked, and the herbs were just completely overpowering."
