Roisin's Pecan Plaits

Roisin Conaty's signature entry was a set of braided pecan plaits filled with sweet maple and pecan. Having confused the name with "pecan plates" in preparation, Roisin tackled braiding for the first time under competition conditions.
{Roisin}: "I'm making pecan plaits." Running short on time, she produced only six of the required eight pastries.
{Roisin}: "They look absolutely disgusting."
Despite the self-deprecation, lamination was visible in the layers and the maple pecan filling earned genuine praise from the judges. Butter loss during baking left the pastry noticeably dry, and the puff was considered denser than ideal.
Paul Hollywood noted butter loss had made the pastry dry:
{Paul}: "It's quite dry. You may have lost a lot of butter when you were baking it."
Cherish Finden: "Tasty maple. The pean is crunchy. It's nice. It's flaky. Very good effort. Love the taste profile."
She also noted: "I think overall the taste profile is quite nice. However, I think the puff pastry is actually very dense."
