Who made this dish?

Tristen: "I have a dessert. I call it tropical roots. It's basically a carrot cake. No carrots but using parsnips and then just, like, a little coconut milk veil on top. Doing a plantain miso sauce and a ice cream using cassareep."


Tristen (working with Zubair on the dessert) "Do you have enough sunchoke? How about adding some sweet potato in there?"


Presenting to the Judges


"This is similar to a carrot cake, but also to a pone. A pone is basically a root vegetable dessert that we eat in Trinidad. I've paired that with different roots that I found here. Sunchoke, some sweet potato spiced with a little bit of garam masala. On the bottom is a charred plantain, cream, and cassareep sorbet. This one's a really big honor to my parents."

"I think it's interesting, but to me, this is where the whole thing got off the tracks here. I don't want effervescent ice cream. I think it's too spicy."
