Rose, Lychee and Raspberry Fruit Tart

Narrator: "James does not just have his pastry case in the oven. At some point, James's macarons will decorate his rose, lychee and raspberry creme mascarpone tart."
James: "Well, this is a flavour combo that I first had in Paris, and I was so kind of blown away by the combo that I thought I had to bring it up here."
Asked how many macarons he needs, James: "Not as many as that, actually. Entirely happy." When a host pinched a macaron with a tail on it: James: "No, Mary, that one did not exist."
Paul: "You've gone to town. I like the little macaroons on the top. They're quite tricky to make."
Mary: "It's a nice colour, and it's a nice depth." Paul: "Good, strong bake. And this creme pat that's on the top has held reasonably well. I love that. That's like a Turkish delight."
Mary: "Tastes like a rose cream."
Paul: "It's lovely."
Mary: "I have never had a rose flavoured tart before."
Paul: "Well done."
In deliberation, Mary: "James had a wonderfully flavoured top, and he bothered with those little tiny macaroons. It was just perfection." James was named Star Baker this week.
