Glenn is head of sixth form at a school in Exeter and is on a mission to get all of his students baking. His Rosemary and Parmesan Grissini are made using milk and butter. Glenn admits he can't be patient with yeast proofing and just gets on with kneading.
Paul: Do you normally make grissini with butter? Do you usually have butter? Glenn: No. Paul: Olive oil. Olive oil butter makes things soft. You're fighting that as well. Glenn: Yeah. And the quantity of cheese does the same. Paul: Good luck.
