Richard made American pumpernickel rolls with treacle, coffee, cinnamon and cranberries, sprinkled with caraway seeds. Richard said: "I'm doing an American pumpernickel today. You have a lot less rye but a lot of extra favoring. And so I'm filling it with tree core and coffee and cinnamon." He acknowledged: "Well, there's two types. The American one is one that they invented. That was a quicker version. There is only one pumpernick on that comes from Germany. In that case, I'm doing a poor factory facsimile of a pumpkin."
Paul Hollywood commented: "So the appearance is not very appealing. No." He suggested: "If you were to Take one of these and get rid of all the extra bit on the side like that." After tasting: "Yeah, I think the favor is pretty good, actually. And you've got a lovely bake. Yes, actually, that is a nice roll." He noted concerns: "I don't like these lines. When you see where the glaze finishes and the roll starts." Inside inspection showed: "Look a little bit underbaked inside. You know, when you push it down it. It sticks to the bottom. I love the crust on it."
