Sean: "It's like a s'mores bar you're gathering around with friends. Just a hint of spice. Not enough to be spicy, but enough to give you some warmth."
Voice-over: "Shawn's campfire cookie bars had a pecan cookie base topped with spiced brownie, chocolate ganache, piped meringue, and a tuile decoration."
Paul Hollywood, talking to Sean: "So you've got shortcrust on the bottom with brownie on the top of that. And then a thin layer of ganache as well. And then the meringue?"
Sean: "Yes, And then the tuile."
Paul Hollywood: "Goodness, that's a lot. I'm worried about your timing."
Paul Hollywood, tasting Sean's cookie bar and looking thoughtful: "It's not chilli?"
Sean: "There's a little bit of cayenne."
Prue Leith: "Peppery. Yeah."
Paul Hollywood: "That overwhelms everything, almost."
Prue Leith: "With a cinnamon back note. Oomph is good, but I think you've over oomphed."
Paul Hollywood: "I love the idea. I think you just need to pull things back in a little bit."
