Salted Caramel and Chocolate Mousse Tart with Dark Chocolate Cremeux, Berries, and Olive Oil Ice Cream.
Patrick struggled from the outset of the cook-off, with things boiling over and a chaotic beginning. He said: 'It's just a bad start. Everything boiling over, trying to get too much going at once. It's time to just slow down and focus.' He described his dish as: 'A chocolate tart with salted caramel hazelnut praline and an olive oil ice cream. I'm doing a chocolate mousse inside the tart, which will be a bit lighter on the milkier side, and then a cremeux on top as a garnish, which will be dark chocolate.' The judges noted the pastry needed to be thin and even, the mousse needed to be aerated and rich, and caramel required the correct temperature and colour. His tart cases cracked from overworked pastry and leaked caramel, and he came very close to not having anything on the plate in time.
I'm amazed that we have a dessert in front of us.' Patrick replied: 'Yeah, I was just happy to get something up in the end.' 'I know you had an issue with the tarts coming out. I saw the tart break and you kind of patched it up and garnished it. But the caramel was delicious. You got that bitterness in the cremeux. This is really tasty.' 'You rolled that pastry out about three or four times, pushed it back together and stretched the gluten in it. You turned it into a biscuit so it's firm and it sort of works. Because your mousse is incredibly soft, you've got away with one here.' 'On my plate, the caramel was running out of the bottom. This olive oil sauce doesn't work, and I wouldn't serve that. It doesn't taste of anything. But the tart tastes better than it looks.' In deliberation: 'Patrick, for me, doesn't work well under pressure. As delicious as the tart was, we can't ignore the fact that two out of three were broken and the ice cream didn't work.' Patrick was eliminated from the competition.
