Salted Caramel Chocolate Mousse Tart with Toasted Hazelnuts, Raspberries, and Vanilla Ice Cream. 


Brazilian-born private chef Caroline chose to make a dessert: a salted caramel chocolate mousse tart with toasted hazelnuts, raspberries, and vanilla ice cream. She said: 'I'm going in with all the energy I have. I think when you're having fun, when you're in your zone, is when you deliver your best.' She made salted caramel folded into chocolate mousse. The judges observed she needed the salt caramel to cut through what would otherwise be a bitter, dense chocolate. She ran very close to the time limit, with the tart cases still in the oven and the cold mousse being added at the very last moment. A judge urged: 'Your paste has just come out of the oven. You've got cold mousse going in there. You've got nothing on your plate. You've got two minutes to go.'

Caroline, the pastry is beautifully cooked, nice and golden. It's got a crisp crunch to it. But what is missing is that salt caramel flavour to cut through the dense chocolate mousse.' 'The mousse, you were touch and go there for time. It's got a lovely soft texture, but the caramel and the salt, the two things that I'm really searching for, I'm not finding them. Vanilla ice cream is very good. It's incredibly smooth.' 'What I've got is very nice. I've got a nice chocolate tart with some raspberries. It's just lacking something.' Caroline said: 'I think this was not my finest challenge, but it's okay. Nothing else I can do now, so just wait.' Caroline progressed to the next round.
