Salted Caramel Eclairs

Salted Caramel Mascarpone Cream Eclairs with Praline Ganache. Dan's second eclair featured salted caramel mascarpone cream topped with crisp tempered chocolate and praline ganache.
The judges praised this eclair highly. Paul noted the chocolate was at the right level and gave a lovely texture. The crackland topping and coffee level were absolutely spot on. The eclairs were well-filled and well-baked. Prue declared she loves coffee eclairs and found this one perfect.
