Sea Buckthorn and Lemon Mochi with Crowdy Cheese Ice Cream. 


Jun: "Gonna make some sea buckthorn curd. Took me so long to nail down this curd recipe." Jun: "It's a lemon and sea buckthorn ice cream, mochi, and looking like a fried egg almost." Jun: "So I've got the mochi skin rolled out. Just need to fridge it." Jun creates a yolk from his sea buckthorn curd. Jun uses crowdy cheese in his ice cream, the same Scottish ingredient Hannah also chose. Jun: "I'm sorry about my ice cream set." Jun: "I don't know how to stop it."

VETERAN ROUND: Adam: "That's tasty." Adam: "Funny texture, that glutinous rice. Needed to be kneaded to an inch of its life." Orry: "It's really nice." Jun: "You think so? Refreshing." Hannah: "Yeah, I think it's good. I like it." Adam ranked this pre-dessert 2nd out of 3. Adam: "This one's my second favourite. I like the flavour." JUDGING ROUND CHANGES: Jun dropped the mochi skin and added candied clementine slices instead, to look more like a sun. Jun: "Crowdy ice cream, but the presentation is going to be a little bit different. No mochi skin this time." Jun: "I'm gonna do some candied oranges because it looks more like a sun." JUDGES FEEDBACK: Tom: "Sticky and chewy and flavour wise I actually really like this, but technically it's a little bit thick." Phil: "I just thought the candied orange was a bit too chunky, just bit too big." Lorna: "I really like the flavour of this one, but I didn't eat my orange because it looked quite thick, and it's sticky, so I knew it was going to be chewy." Catherine: "I really liked this one. I also avoided the orange, but I just thought the ice cream was lovely." Tom: "Even with a clunky bit of orange on the top, flavour wise wins." Jun's pre-dessert WON the judging round ranking, with all judges preferring it over Orry's.
