Matt's dessert: a set buckwheat cream with an apple jelly and buckwheat centre, topped with apple 'scales', whipped apple cream, crisp apple-brioche croutons and an apple caramel sauce, finished with a crisp maple-leaf tuile.
Matt: "Dessert I'm really excited about is going to be set buckwheat flavour cream... a little maple leaf tuile. My mum born and raised in Vancouver, so it's nice to have that." He noted the tuiles were delicate, with only about a 15-second window when pliable enough to mould before they crack.
Anna Haugh: "The buckwheat has got really mild but delicious notes of almost like coffee in it... when I eat the buckwheat with the set custard, it's just really delicious."
Grace Dent: "I love this. The thing that made me quite emotional is the sauce, because... it's appley and it's boozy, but it's just got a bitterness... it reminded me of being ill when I was a little girl and my mum giving me cough syrup. The soothingness and wholesomeness of it... really outstanding. You've never played it safe and you can hold your head up high."
