Sicilian Chocolate Ricotta Cake with Orange Pastry Cream and Chocolate Almond Bark

{Julia}: "I'm making a Sicilian chocolate ricotta cake with orange pastry cream and chocolate almond bark. It goes back to a town called Modica in Sicily. The chocolate is rich and dense, but the secret is not overcooking it and making sure it's not dry."

(Her cake broke coming out of the tin.)

{Julia}: "Instead of one elegant cake, I'm going to make three tiny intricate cakes."

{Julia}: "I put up a dish I'm very proud of, that Mimi would be proud of, and that was truly Sicilian."

Top four (Europe) and WINNER of the challenge (immunity pin plus the OXO baking prize).

{Judge}: "Visually it's beautiful. It's elegant."

{Judge}: "The surprising thing tonight is seeing how much work you put in across those 75 minutes. Really well done."

{Judge}: "You want a little creaminess with this cake because it is dense. I love everything on the plate. Delicious."

{Gordon}: "Here's the magic, look how thin that is. And that's hard."

{Judge}: "You used each iconic Sicilian ingredient efficiently, and this dessert is transporting in its taste. That's a very big compliment. Great job."
