Dyana's Sicilian Orange and Pistachio Bars


Voice Over: "Dyana's cookie bars have a ricotta filling on a pistachio cookie base topped with an orange mascarpone cream and a white chocolate petal."


Prue Leith: "Setting is important, right?" 


Dyana: "Right." 


Paul Hollywood: "So when we cut into it, is it going to hold?" 


Dyana: "Without a doubt it's going to hold."

Dyana: "I've had better days."


Paul Hollywood, indicating the cookie bars: "So have they."


Prue Leith: "Were you assembling them while they were a bit warm?"


Dyana: "Yes."


Paul Hollywood: "The cookie bar is too thick. Probably would have been better to bake the base as you did on its own and then make the filling separately. And then assemble it."


Dyana: "I never would have thought of that."


Paul Hollywood: "Great flavour, though. Your flavours are good."
