A smoked beef tartare made with finely hand-cut beef, bone marrow, kohlrabi and onion, seasoned with smoked mayonnaise, Tabasco and a measure of brandy, finished with ember oil and shaved cured egg yolk. Jeff described the seasoning: 'Smoked mayonnaise, tartare mix, Tabasco, bit of brandy.' He acknowledged the boldness of his flavour choices: 'I have been quite brave. Hopefully not too brave. It is extremely overpowering.' Simon Rogan noted: 'Good bitterness from the red beet radish going through there.'
VETERAN ROUND: Veteran Simon Rogan ranked this canape second of the four, commenting: 'I love the taste of the beef. I love the textures with the emulsion in there, but not quite as good as number one.' No numerical score was given; the canape ranking was held in reserve as a tiebreaker.
