Smoked Catfish Dip with Dehydrated Herbs and Sesame-Lemon Focaccia 


Jennifer during prep (despite arm pain): 'As much as it sucks to have this radiating pain, the elimination challenges are kind of different for me because I'm not running around, and I'm just going to power through.' 


On her dish concept: 'We're in the Midwest. We make a ton of whitefish dip. We use a bunch of dehydrated elements in our dip, so I just thought that would be a good vessel.' Her dehydrated items: 'Onions, peppers, lemons, ton of herbs. I want it to be, like, really nice and bright. I want my smoked catfish dip super whipped and airy and vibrant from all the dehydrated items I put in there.' 


At presentation: 'I made smoked catfish dip with a bunch of dehydrated herbs, and focaccia with sesame seeds, poppy seeds, and some of the lemon that I dehydrated.' She also noted she was on steroids for her injury. Later she chose to remain in the competition: 'I feel like I worked really hard to get here, and I think I should stay and push through.'

Gail: 'Jen's dip is good. Flavorful. I liked how she made it with all of these dehydrated ingredients. I think that's cool.' Joe: 'If you're gonna do something like catfish, I think it takes confidence, and I think the execution is really good.' Tom: 'Do what you do. Do it well. This is what she does.'
