"The tostada with the smoked fish - the smoke didn't come through."


Harriet Mansell: "The tostada didn't do so well because of those wet ingredients together."


Gail Simmons: " There was  no way to pick it up and eat it without it crumbling apart."


Gail Simmons: "Gabri, with your tostada, how did you make that smoked fish piece? What did you do to it exactly?"


Chef Gabri: "I rolled it in plastic, and then I put it to smoke."


Gail Simmons: "I got a little smoke at points. I just think the construction didn't work. And when you're in a picnic setting, that becomes the issue. Your tostada was delicious. It was so crispy and thin, but when you put a very thick piece of fish on top, it wasn't easy to eat."


Tom Colicchio: "This wasn't one of your most successful dishes, and it didn't pack the kind of flavor and punch that I thought the dish could have packed."
