Smoked Haddock and Watercress Quiche

Simon, a dad of two and the family cook, builds his smoked haddock and watercress quiche on a dill-flavoured shortcrust pastry case.
{Simon}: "Just getting the pastry started, it's coming together nicely. The tent's nice and cold, so nothing's melting yet." Having secured his place the previous week, his confidence is up.
{Simon}: "Feeling a lot more comfortable securing a place in the second round has put my confidence up. I'm just going to turn out a good quiche today." He keeps the pastry cold and works to get the base fully baked before filling.
{Mary Berry}: "That's tasting really rather good. The dill certainly comes through in the pastry, and it goes very well. It doesn't look anything special, but it certainly tastes very special."
The dill-flavoured pastry was the highlight. Simon later struggled in the technical, finishing 11th - Paul called it "slightly overdone" with pastry "a bit of a mess."
