Sean's quarter-final main: smoked haddock and asparagus risotto. Sean grew up by the Kentish coast and wanted to showcase a bit of fish. He was confident with his stock-adding until he tasted it. The judges flagged the steady hand needed when adding stock, and the importance of timing the asparagus so it stayed al dente and vibrant green.

Tony Rodd: too much liquid has definitely gone in - it is a wet risotto. Simon Wood (paraphrased): the asparagus is surprisingly crunchy; the dish is okay, but he won't remember it tomorrow. 


John: it's a little bit too soupy. 


Anna: there are some really good flavours; she can taste the haddock, and the asparagus is al dente, really delightful.
