Smoked Mussel Sandwich

Massimo: "I only cook mussels when they're in season, and only when they're from PEI. Mussels are not as easy as people think. 30 seconds is enough to overcook them. 30 seconds of undercooked mussel is enough to make somebody violently ill. I'm cooling these off in a little bit of a water brine, because I'm goiong to make a zucchini blossom sandwich."

Massimo: "A smoked mussel sandwich with tomato emulsion and, of course, zucchini blossoms."

"Massimo, good idea. Unfortunately, there was another zucchini blossom that was a little better."
"Also, when we talk about mussels, you want to evoke that flavor of the ocean. And the seasoning was a little bit missing."
