Smoked Onion Carbonara with Sous Vide Duck Egg Yolk and Smoked Hickory Parmesan Corn Toss — first half, second dish from Buddha. Techniques: Smoke, Sous Vide (2 techniques). Buddha Lo: You got a smoked onion carbonara on the bottom, we have a sous vide duck egg yolk, and smoked hickory wood parmesan corn toss. When asked about the egg yolk: So I cooked them inside a bag so they got, like, a nice jammy style texture. This dish received the harshest criticism of the episode. Buddha dropped to fifth place after this dish.
Michael Cimarusti: Did you peel the onions, though? It's very unpleasant. You can't really chew it, and I certainly don't want to swallow it. Padma Lakshmi: Explain to me what you did to the egg yolk. Is this jammy to you? This is just the worst dish I've had ever. Wiley Dufresne: It's not great at all.
