Smoked Sous Vide Snapper with Sweet Potato and Fish Caramel — second half, Beverly's second dish, presented together with her avocado coconut sorbet. Techniques: Smoke, Sous Vide. Beverly Kim: The first dish is snapper that I smoked sous vide, the sweet potato, and a fish caramel. Beverly was 24 points behind Keith and fighting to avoid elimination.
Padma Lakshmi: Beverly, I love this dish. I think it's flavorful. It's full of surprises. Wiley Dufresne: This is one of the best examples of sous vide root vegetable we've seen today. Michael Cimarusti: Fish was cooked nicely, smoke came through well, and generally quite a nice dish.
