Roasted and Smoked Sweet Potato with Miso Butter, Santa Barbara Uni and Charred Sweet Potato Leaves
A toast to California and to Rhoda's sister Katrina. While shopping: "My first dish, I'm thinking sweet potato and uni. I want this to be a toast to California. My sister Katrina and I moved to the states together 20 something years ago. I knew if I worked hard enough, I could make something of myself."
At service: "My first course is a toast to California. This is a roasted sweet potato with miso butter, Santa Barbara uni and charred sweet potato leaves."
At the final table: "There's roasted and smoked sweet potato. I didn't want the urchin to get lost. That's my ode to California."
{Judge}: "A lot of sea urchin. Very pretty."
{Guest}: "The uni is unbelievable. There was sweetness there."
{Judge}: "That uni was spectacular."
{Judge}: "I don't know if I've ever had sweet potato and sea urchin before. It was something new and something different. When do you see something new these days?"
Final table: {Judge}: "The smoke on the sweet potato really came through."
{Guest}: "How that sea urchin really shines through some of that sweetness. I thought it was really successful."
{Judge}: "I thought it was just a fantastic dish. Very original." In deliberation it was called possibly the most delicious dish of the night, and out of left field.
