Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. Danni made cinnamon snickerdoodles topped with peanut brittle made with golden syrup, cream and butter, some of Paul's favorite flavors. Because Danni is vegan she could not taste her non-vegan cookies and relied on her mum and sister, who are big fans. {Danni}: "Everything's going to go right and nothing's going to go wrong. But if it does go wrong, I've got 10,000 contingency plans." {Danni}: "So they are snickerdoodles. A snickerdoodle is a cookie that is made using cinnamon. I've got a topping of peanut brittle." Paul said it was one of his favorite flavors. {Danni}: "So it's using golden syrup and cream and butter and all that jazz." Nigella asked how she tastes them if they are not vegan. {Danni}: "I don't. My sister and my mom are all massive fans." {Danni}: "I'm doing some of his favorite flavors, so if I get them wrong, he will decapitate me." {Danni}: "I am giving my bickies a good old twizzle." {Danni}: "Can you believe it? I've actually finished something." {Danni}: "When you present your bakes to your family, they're like, oh, these are nice. Oh, these are nice. That doesn't tell you anything. So I'm taking notes whenever I'm getting feedback, as I really want to get them really nice tasting."
{Nigella Lawson}: "I like the way you've decorated them." {Paul Hollywood}: "Very similar. It's very similar." {Nigella Lawson}: "There is a bit too much cinnamon and too much bicarb. It's impossible to know what you're baking if you don't taste it." {Paul Hollywood}: "The cookie itself is overbaked and it's very powdery. The nuts themselves were a little bit too salty. Other than that, sensational." {Danni}: "Other than everything." Later, in the judges' review: {Nigella Lawson}: "The problem was she was baking a cookie she couldn't taste." Paul named Danni as one of the bakers in danger.
