Michael Cimarusti: The sous vide technique, you use it to great effect. It's still a bit firm. The sweetness from the squash comes through, but it's like it's meaty at the same time. You gave us three concise, focused, delicious dishes. Well done. Padma Lakshmi: You should always cook like this.
