South Bay Sur - Charred Purple Majesty Sweet Potato with Agave, Chorizo Hash and Pasilla Salsa 


Sweet potato variety drawn: Purple Majesty. 


{Oscar}: "I don't think I've eaten a full purple majesty potato, like, as its own thing ever. Apparently, it's a very new potato. It only was created in 2021." 


{Oscar}: "Deconstructed hash. A little Mexico meets the American South. Chorizo that I'm going to remix." 


At presentation: {Oscar}: "So I'm calling this dish South Bay Sur. It's cooking a sweet potato kind of in the way that, like in Mexico City, they char them hard. I added some agave, chorizo hash on top, pasilla salsa to go with it. It's just a little dollop. It was just a crazy, brazy kind of dish."

SAFE (middle position) in the Purple Majesty round. A judge responded warmly at the table: "Crazy brazy. I like it." Oscar was not called to the top or bottom at judges' table. He was described as safe overall.
