Soy Glazed Sweet Potato with Miso and Lime Crème Fraîche

Soy Glazed Covington Sweet Potato with Sweet Potato Miso Puree, Crispy Sweet Potato and Lime Crème Fraîche
Sweet potato variety drawn: Covington.
{Rhoda}: "I'm thankful I got the Covington. Perfect amount of sweetness. It holds its texture well."
{Rhoda}: "I'm going to caramelize some sugar, so you need to get my sweet potatoes glazing in my soy lime glaze. In the Philippines, we have this dish. A lot of street vendors sell it. We call it kamote cue. Just putting them back on the grill to finish caramelizing. You just have, like, big chunks of potatoes. It's delicious."
During cook: {Rhoda}: "I need to pop this piece of fish under the heat lamp just to make sure it cuts through. Is that heat light on above my fish?"
At presentation: {Rhoda}: "I grew up in the Philippines eating sweet potatoes on a stick. It's kind of like a common vendor item on the streets. I made a soy glazed sweet potato with sweet potato miso puree with crispy sweet potato and lime crème fraîche."
WINNER of the Covington round and OVERALL WINNER — awarded immunity for the next elimination. Kristen Kish: "Rhoda, congratulations. Almost unanimous." Tom Colicchio: "The miso really made the sweet potatoes sing. That salty brought out the sweetness. The execution was great. I was very impressed with how crunchy the sweet potato was." Judge: "This was the sweetest potatoest of all the sweet potato dishes that we had. It's a fantastic dish." At judges' table: "When you ate Rhoda's, it was sweet potato as a complete dish. That was a standout. I mean, that dish, it was cooked perfectly, had like nice char, and her story behind it is really intentional." Final award by Sean Brock and Jamie Lynch: "Just layers and layers of sweet potato, and I love when I hear your intentions behind the dish and you execute on it. I'm not going to forget your name. Nice job. You won the first elimination challenge. That gives you immunity going into the next one."
