Spanish Tri-Tip Slider

A Spanish-inspired slider built on tri-tip two ways: ground bacon and tri-tip pressed into a patty, and a second portion of tri-tip marinated, grilled, and topped with the juice of roasted red peppers. Katie came in from the bottom of the butchery round and leaned into crowd-pleasing sliders to maximise points.
Katie: "I'm making sliders."
Katie: "I am thinking about the fact that I only have five points. At an event like this, people love sliders. I am working on a kind of Spanish-inspired slider. I take a bite out of it and it's like one of the best burgers I've ever had. That is the goal."
Katie (to judges): "I made a Spanish-inspired burger with the tri-tip two ways. I ground bacon into the patty with the tri-tip. The other tri-tip preparation, I marinated it, grilled it, and topping it with the juice from these roasted peppers. And the point is that this burger be incredibly juicy. I think burgers should, you know, drip down your arm."
Wiley Dufresne: "I do think the burger sort of came apart a little bit. It was a little bit crumbly for me, and I think maybe that the roasted red peppers could have been maybe cut a little bit thinner."
Padma: "I studied in Spain. I love these flavours. But when I bit it, I got a long piece of connective something. You want a burger that's easy to bite a piece of meat off of."
RESULT: Safe. Moving on in the competition.
