Spiced Potato in Kataifi Pastry with Three Chutneys and Chickpea Gravel.
Spiced potatoes wrapped in kataifi pastry and fried until golden and crispy, served atop charcoal-blackened chickpea flour scraps resembling gravel. Accompanied by three chutneys: a spiced yogurt chutney (with cumin seeds), a mint and tamarind chutney, and a third chutney. The potatoes were tempered with fennel seeds, cumin seeds, and black onion seeds. Decorated with pomegranate seeds and edible flower petals. Rohan described himself as 'humble like a potato, hard from outside but soft on the inside.' The chickpea scraps were made by creating a batter with added charcoal and frying spoonfuls.
Adam Handling scored Rohan 7 out of 10. Adam said the potato itself was delicious, but the bottom lost its crispiness because of all the chutneys. The crispiness was also lost because Rohan pre-fried the potato and then put it in the oven. Adam noted the potato was quite high on the chili front for a banquet, and some people might find it a little too powerful. With tweaks like these, Adam said Rohan would score higher. Orry commented that the kataifi had gone a bit tacky in the oven and would have been better deep-fried closer to serving. Jun noted serious heat.
